Ari Payasam/Rice pudding with jaggery/Temple style Aripayasam/Easy Aripayasam/Quick sweet dish

Easy tasty ari payasam...Sweet kerala delicacy which melts in your mouth!!! Ingredients Rice 1cup(red raw rice or raw rice aka pachari) Water 3 cups(or as required) Jaggery 4 cubes (increase or decrease based on your taste) Ghee 2tbsp Grated coconut 1 cup Cardamom powder 1tsp(optional) Raisins 1tbsp Sugar candy 1tbsp Thick Coconut milk 1 cup Method: In a pressure cooker, pour water and make it boil. Once the water is boiled, add washed and cleaned rice to it. Close the lid, keep it on medium flame and wait for the first whistle to come, and then simmer it and keep it for 12 minutes(This varies based on each type of rice). While rice is getting cooked, melt jaggery in 60ml water, and keep it aside. Once the rice is cooked, pour the melted jaggery to the rice using a seive, after that add grated coconut after crushing it with hand by adding a little bit of water, Once the rice, jaggery and coconut mix is ready add, 1tbsp ghee and mix well. Then add raisins and sugar candies as well. Raisins need not be roasted in ghee. Normally for the temple payasam, the raisins will be added without roasting. As we are making 2 types, I am keeping half payasam separate and then in rest of the payasam pour coconut milk and mix well. ( If you want a thin consistency, you can add 1 more cup of coconut milk). I normally use canned coconut milk or coconut milk powder by maggi. As the last step add half tbsp of ghee to both sets of payasam!!!! Our yummy kerala temple style payasam is ready!!!!😊😊😊 . .
