Ingredients:
- Split chickpeas- ½ cup
- Water- 6 cup
- Mutton / beef- 500 g
- Cardamom- 3 nos.
- Clove- 3 nos.
- Cinnamon- 1 stick
- Mace flower- 1 small
- peppercorn- 6 nos.
- Bay leaf- 2 nos.
- Dried red chilli- 5 nos.
- Caraway seeds- ½ tsp
- Turmeric powder- ¼ tsp
- Coriander powder- ½ tsp
- Salt- 1.5 tsp
- Ginger paste- 1 tsp
- Garlic paste- 1 tsp
- Oil- 1 tbsp
- Ghee- 3 tbsp
- Green chilli- 1 nos
- Coriander leaf- 1 tbsp
- Mint leaf- 1 tbsp
- Lemon juice- ½ tsp
- Egg yolk- 1 nos.
- Oil- for shallow frying
Preparation:
- Soak split chickpeas with water overnight
- Chop green chilli
- Chop coriander leaf
- Chop mint leaf
Process:
- Add mutton / beef with soaked chickpeas. Add cardamom, clove, cinnamon, mace flower, peppercorn, bay leaf, dried red chilli, caraway seeds, turmeric powder, coriander powder, salt, ginger-garlic paste, oil and water. Mix everything properly and turn on heat. cover and cook 1 hour on medium heat.
- Add water, cover and cook 30 mins on medium heat
- Remove bay leaf and cinnamon
- Cook 7-8 mins on high heat until water dries up
- Cool at room temperature. Transfer to a grinder, add ghee and grind properly. Transfer to a bowl
- Add green chilli, coriander leaf, mint leaf, lemon juice; egg yolk and mix all ingredients
- Apply ghee to palms, take a small portion of mix, roll into a round shape; shape into kabab form. Mix will yield 10-12 kabaabs
- Heat oil for shallow frying. Add one by one. Fry in batches. Fry 2 min on medium heat. Flip over and fry 2 more mins on medium heat. Remove from oil
