QABILI PALAU | KABULI PALAU | AFGHANISTAN'S NATIONAL RICE DISH (EASY & AUTHENTIC RECIPE 2019)

Qabili palau is served at every Afghan party, event or wedding. This is a flavorful rice dish with chicken, raisins, carrots and almonds and a favorite of all families with small children. The rice has mild savory flavors but not spicy. An Afghan woman's marriage prospects hinge on her ability to make Palau. So, you can imagine how much thought and effort goes into perfecting this Afghan rice dish usually cooked with meat, topped with raisins, carrots and almonds. In Afghanistan, people usually use lamb or beef but I prefer using chicken. You can go through the same steps and just substitute another meat. Jeja, my mom, makes the best Qabili Palau in our family. My cousins request this dish when they visit her. The most important part of making Qabili Palaus is to keep the rice from breaking while it develops a deep rich brown color in the multi-step cooking process. Most people think we use brown rice, let me tell you folks, I had not seen brown rice until I was well into my 20's when I started cooking for myself. The white, long-grain rice takes on a rich brown color from the caramelized onions and chicken sauce. Using unprocessed, long-grain white Basmati rice is key in having success with this dish. I buy rice from the Afghan grocery market which passes muster with Jeja. The heartier unprocessed rice needs to be soaked for a few hours to plump up. For this video, I used grocery store-bought Basmati rice which can't handle the soaking and the two-step cooking technique. That is why I left out the soaking in my recipe. This dish takes me around 1:45 minutes from start to finish. I have integrated short cuts to help save time. I know Jeja would frown upon some of my techniques but I have made sure that the Qabili Palau retains the rich flavors of the original recipe.
